Ben I've heard you say you accept fiat because you have fiat bills you need to pay. @npub1ex7m...vyt9 just released the billpay feature for business accounts. You should check that out. Seems like it might solve your issue.
It's also because I have to manually input every Bitcoin order because of liquor laws complexity. It'll be years before going Bitcoin only makes since and it comes with orange pilling an establishment business

There are ways to keep accounting on BTCPay. By "Manually input every Bitcoin order" is that in something separate to your POS? If not, I could help you set up a payment workflow that accounts every sale in BTC. And if you add the Strike Business API, you can billpay without ever touching dollars. Lemme know.

Gotcha, I just have to believe the tool is either in existence or craftable. I bet there's some annoying cost basis field that needs adjustment. Ontop of that each state tax is dollar denominated. I don't envy white-market businesses.

Oh, believe me I see the predicament. Do you have reciprocal licenses already or is it specific compliance documents needed by each state? As far as I am aware, proof of licensure is all that is needed for sale and distribution, maybe I am missing what, outside of collecting the accurate tax, is necessary for ducumentation.
I wish we were free so you didnt have to worry about such garbage. So much energy is spent on fucking compliance.
