Reminds me of booking flights. Airline sees you browsing for flights on given dates and instantly jacks up the price within an hour before you’ve had a chance to complete the reservation.

#privacy has many layers. There are many levels. For those who focus on privacy it is a lifestyle, which often requires tradeoffs and compromises. In any corporation, there are more things and departments that don't work, or pretend to work, and on top of that comes legacy, etc. I'm not saying that Google, Microsoft, or Amazon can't do anything, but if something works, even more doesn't work or is about to break soon. 🤭
It is the same with flying and traveling. If the algorithm knows that you love or have to travel (e.g. for work) prices go up. It is horrible and it is still evolving on a daily basis, so it is gonna get worse for sure.

Social media algorithms nowadays are mind control. Back in 1957 subliminal messaging was used to increase popcorn sells in the cinema. During fractions of a second projections with the line "Buy Popcorn" were shown in movies. It increased the sales by 57%. Imagine what can be done with the algorithms nowadays! Our monkey brain can't deal with it!
You're not going to pay the max. Free markets prevent this through competitions and choice. There isn't only 1 shop, search or AI.

Yeah... I was more looking at it as surge pricing via micro demand. I think conditional pricing may make more sense and they can all fit under that umbrella. I do agree with you that all of these avenues will be big in coming years.
