Most delicious and nutritious part of the cow, but you can't eat too much of it as it's too fatty. You need muscle meat

I’ve never had cow brain. I’ve had pig brain though. I kept telling myself it’s brain so it felt slightly offsetting. Flavor was not bad actually.

Yeah I thought it would be pretty fatty. It apparently used to be quite frequently eaten in restaurants where I’m from (Austria)… used to be on most menus, especially brain with eggs… but when mad cows disease hit they all removed it… never found a place to try it in Europe. 🤷♂️ would be interested though.

Yeah it’s always weird to eat something that feels “off” for the first time. We had cockroaches and spiders in Cambodia. It was a hurdle at first but the cockroach wasn’t so bad actually… the tarantula… meh… 😂

I recommend Chuck steak rather than ribeye - cheaper and more flavorful
I've not eaten either. Chicken hearts (and liver) are nasty. I am okay with pork and beef liver. Brains are just a no-go.

Need to try that - usually calf liver each weekend for my organ meat, along with bone broth.
A little too on the done side for me. I prefer my steaks and organs a little more on the rare side.
I'd skip eating heart and brains.

Been doing our ribeyes for 4 hours in the slow cooker, then reverse seared 1 minute per side. Absolutely amazing flavor and texture.

Thought so. I’ve been harvesting a lot of lambs recently. I always save the hearts of course, but I don’t save the brains.

Actually nobody has ever asked for it. I don’t think there are any regulations against it here, as for instance there are with lungs, just uncommon. I do save the heads for some customers, so I suppose they could be taking the brains out. But seriously…does it taste good?
The tastiest part of the animal. And probably the most nutritious too. Very different flavor, almost butter like. It's also absolutely delicious to boil the entire head and make soup and eat it. Best soup you'll ever have

Yeah, I was right there until you said brain. I think prions are a really and awful threat that should be considered before consuming brain.

Have you tried the Lebanese recipe of lamb testicles?
You should try chinchulín and molleja whenever you have the chance. A great asado, for sure.
