Ben I've heard you say you accept fiat because you have fiat bills you need to pay.
@strike just released the billpay feature for business accounts. You should check that out. Seems like it might solve your issue.

It's also because I have to manually input every Bitcoin order because of liquor laws complexity.
It'll be years before going Bitcoin only makes since and it comes with orange pilling an establishment business
There are ways to keep accounting on BTCPay. By "Manually input every Bitcoin order" is that in something separate to your POS? If not, I could help you set up a payment workflow that accounts every sale in BTC. And if you add the Strike Business API, you can billpay without ever touching dollars. Lemme know.
