For many reasons:
1/ Chat are not encrypted by default;
2/ Telegram has collaborated with governments on several occasions to remove channels and/or arrest administrators;
3/ It is becoming a money-making machine with its NFTs and TON shitcoin.
They rolled their own cryptography for some reason.
it's centralized and proprietary, also E2EE is not on by default
