I haven't been creative in the kitchen for quite some time... somehow I always raw-cooked the same things with different ingredients... To others it may have looked very creative and varied... but to me it was somehow very monotonous and a bit listless. Even if the food was/is always nutritious, fresh and colorful.
Yesterday I finally worked creatively again. Let me share here with you a few shots from yesterday...
The first is a creation from the surplus of the breading mix for the raw vegan vishsticks. I made also raw cashew mozzarella and its placed on the lettuce leaf. Everything is garnished with sprouts.
The salad is salad as always with lots of vegetables and an aceto balsamic dressing, plus the raw vegan vishsticks made from almonds, celery, onions, dill etc. and in the evening there was raw vegan olive focaccia with cashew mozzarella and sprouts.
I have to say, everything was soooo delicious 😍
Would you eat it? I have the feeling that this could be a gourmet 5 star meal...😉

I would definitely eat all of that! Looks very good 😋 …I’m vegan since 12 years and i think i should add more raw stuff in my food but I’m too tied to the italian kitchen 😅
Thank you 💜 I know...raw food cuisine is completely different and requires much more planning and preparation time. And your palate has to get used to it. Cooked food is addictive, and so is gluten (Pasta,Pizza...)
But I like using Italian herbs in my crackers, for example... It takes a bit more creativity...I even make raw pizza...it's not the same obviously...but much more satisfying at the end.
From April until recently, I ate cooked potatoes almost every day, as well as chestnuts, sweet potatoes, and even, lately, vegetable curry with tofu. Next to salat and sporits and a ton of fruits...
But I noticed that I felt sluggish and not really satisfied. Now I'm back to a stricter raw food diet, and it's just so incredibly good for me. I have so much more energy, and the food keeps me full much longer without any fatigue afterward.
Maybe you'll give it a try one day? I'm happy to keep inspiring 🙏
It’s a pleasure, your dishes always look so delicious 😊 btw I tried some raw cuisine in the past and also used to go for my lunch break in a raw vegan restaurant close to the office where i was working in milan and i really loved their food… but i gotta admit i’m a huge lover of the italian kitchen and especially i’m a super huge giga lover of pasta, I can’t live without it! I use wholemeal pasta only but at lunch i must have it. I usually have a nice fresh mixed salad with seasonal veggie and seeds dressed with a bit of evo oil and apple vinegar or fresh lemon juice but after that i need my spaghetti/linguine/tagliatelle (vegan ones with no eggs but with added spirulina)… I also love to cook pasta 🍝 and often my friends call me to cook it for them because it is super tasty the way i cook it… i’m the master of pasta for my friends hehehe :) …in the end i can say i have a mixed raw-cooked approach to food, I like both worlds but would like to increase a bit the raw part for some things, without removing the cooked part. I also should eat more fruits, which i basically eat only in the morning… will see, for the next year i’ll try to accommodate these changes… let’s see what happens… your posts are very inspiring! 😉💪🏼🍝🥗🫐👌🏼🫶🏼🍀

Sometimes I catch myself doing by thinking how comfy it would be just to have spaghetti with also al olio…
But at the same time my brain reminds me of how addictive gluten is… so I stay strong😅 but I completely understand you 🍝
I used to bake bread… and loved it too… but same thing: Gluten is like a drug 🙃 and many health issues come from Gluten, also gluten from rice and corn…
Gladly I’ve never had any health issues with all of that…but still by eating raw I’m experiencing more energetic.
And yes, add fruits as much as you want! Fruits are so important also to clean our lymphatic system!!! Which is our wastewater system :) and so our blood stays clean and fluid.
IMOP it’s the easiest way to add raw foods by eating lots of fruits and using sprouts in every meal. They are THE superfoods, next to wild herbs 🌿

I do love vegan food! And i love seeing you are so good at preparing raw stuff and that you have such a great knowledge about food, I would like to have a tenth of your knowledge man!

Thank you 💚 I’m just way too long into this topic… I’m holistic nutritionist since 2006 😅 but in all these years I’ve learned and even more unlearned so many ideas, ideaologies, opinions, fake news, trends…it’s such a labyrinth 🤪
Food is so much more than we think. It’s bound to so many emotions, traditions, etc…but also we have been manipulated since early on to eat stuff that doesn’t belong into our body…and not only we have been manipulated…but also resources themselves…like corn, wheat, veggies, fruits and of course also the animas. All that breeding is so unnatural. No wonder we have all these civiliaational illnesses.

Yep reliable info about food is quite hard to get, despite being so important for our wellbeing, that’s why I find your idea of a virtual living room very interesting! I honestly am not a fan of screens and I have a very mixed schedule but if content will be available also after the live stream it would be easier to follow for sure… keep us posted in case! 🫶🏼🍀
Thank you for your feedback. This is very helpful and I really want to get the information out there, as there is so much misinformation, chaos and misinterpretation without looking at it holistically.
My idea is more like creating a living-room in dialogue, than just a monologue. Where questions can be asked and own experiences can be shared.
But lets see where this idea leads to :) I'm excited and very open to explore...
