Justo Gonzalez The Story of Christianity explains where theology comes from and why certain denominations believe certain things. Justin the Martyr is a solid read as well as Eusebius. You can find most of their stuff in free online pdfs
Solid but not heavy on theology. I recommend this one a lot though!

The church was unified for the first thousand or so years so anything about the apostles line would apply then there’s The Schism which broke Eastern Orthodox and Catholic Church up. I’d look at the schism and try to at least consider the catholic perspective. I myself am biased but it’s very fashionable to hate on Catholics in Protestant evangelical circles and I think that’s a little unfair.
One pretty egregious example I saw was an interview where a guy in the same breath told someone he wouldn’t hold it against her that her grandma was catholic but then praised her for marrying a Jew and converting (explicit rejection of Christ).
