Is your oil organic & what’s the extraction process? Do you use a purely mechanical & cold process to ensure minimal oxidation? What variety of olives do you use and where do you source them? Can you please provide some background infos (or point me to a place where I can find it myself)? Thanks in advance! 🙏🏼

Thanks for the thoughtful questions Paul👌 It’s not “certified organic”, it’s a small family production, and we’ve never needed a label to prove anything. 🌱 No chemicals, no sprays, just trees we’ve been taking care of for years. Extraction is fully mechanical and cold-pressed, done within a few hours of harvest to keep oxidation very low. The blend is mostly Nocellara, with Biancolilla and Cerasuola, all from our own land or from farmers we know personally.
