Iβm a big fan of using what you have. 1qt diced green tomatoes, diced small onion, chopped garlic, sherry vinegar, evoo, salt, a spicy pepper, allspice, yellow mustard seeds and orange peel. Mix and let sit to macerate and βcookβ the tomatoes a bit. Adjust seasoning.
