If you want them having organ meat put some frozen chunks in a smoothie with their favorite fruits (for our kids that's blueberries)
Also find some good pate or make some and put them on crackers or chips. The rule in our house is no crunchy things unless they have meat on top lol
Also finding delicious sausage cut up that they'll eat. Soups too
As they get bigger incorporate them in the actual cooking of the meat and they'll take more ownership of it
We've made it a point over the years to point out to the kids how they feel in their bodies when they haven't had any protein (when they fight, bicker, and melt down way more).
So now they choose proteins first (that takes time though)
