Because of the fact that ice cream cools you when its hot outside
They'd have to keep the meats hot until someone buys them... Which means they will eventually dry out and have to be thrown away instead of sold. Ice cream preserves well while frozen.
I would like a baked potato truck. There are so many yet they're inconveniently located π€
I bet their music would be some tuba driven polka or something. It could be a nice contrast to the ice cream jingles

In Switzerland we have quite a lot of these roasted chicken trucks, more than ice cream trucks for sure.
But they are not roaming with a music to attract you, they are like each day of the week at a different spot and you know which day it's in your village or neighborhood and you can go and pickup a roasted chicken with a bag of chips.

You can drive around ice cream, you can't drive around a food truck. Theres plenty of food trucks, they are just parked somewhere all day bc you can't drive with hot oil sloshing in the fryer.
