you can delete relays, but the way amethyst works now is it connects to the relays of those that you follow which everyone else's app is doing too.

Its 600 that do basic tasks like make sure you see the comments of the posts, seeing all the posts from people you follow, etc. You can disable it by adding proxy relays but you shouldn't have to. These arent used for the global feeds.

Amethyst now connects to the public outbox relays of everyone you follow in order to build your follow feed. If you don't want it to connect to that many relays, you can use a proxy relay instead. Let's say you already run a relay that pulls in all the notes from everyone you follow. You can connect to just that relay by adding it as a proxy relay in Amethyst, and it will no longer try to connect to hundreds of relays. You can also use a paid proxy relay, such as wss://aggr.nostr.land So, you have your options. Read from all the relays that the people you follow are writing to, or just read from one or two proxy relays.
