All github or gitlab apps with no google services, its preeeeetty nice. And if you don't self host already you could go down that rabbit hole as well. New random mac identifier on each restart, tor or vpn of choice with all data packets routed through it instead of iphone which lets some through unencrypted. I could go on an on. Haha the key is to train it. "Ass to Dicktionary" every time for the word "fuck" instead and it will remember. But it also depends on the Universal Keyboard rules, it seems. So some words will be perpetually declined to autocorrect depending on the autocorrect dictionary they are configured for.
