PeerTube is working great, though it does highlight just how expensive it is to do a FOSS youtube. I looked into running a small instance, but it requires more resources than I'm able to fit into my monthly budget.

I was wondering about this. The storage seems like it would be intense for anyone who had an active channel. No clue the tech end. Honestly i don't know what instance actually entails. Is that like a node?
