With bitcoin on chain transactions this cheap, arguably the bottleneck to adoption is not a technical one, it's economic.

It's UX, awareness and integration.
The smart ones already have in cold storage, the rest never will.
It's cheap due to lack of interest of transacting onchain at the moment.
I can only speculate, but the reason I personally almost never move my onchain btc is the horrendous surveillance-friendly lack of privacy and very weak pseudonymity the experience provides.
I would never pay for anything with onchain Bitcoin. And I doubt I'm the only one.

well Bull Bitcoin Wallet has payjoin so that might be interesting from an on chain privacy perspective. Of course in order to make it work better, we need more other people who support payjoin...
If you have your UTXO management up to scratch, there should be no fear about making a purchase on chain if the fee is justified for the amount being spent.
People got spooked with coinjoin-style things since Wasabi. Also, even the less attentive now seem to understand that coinjoining puts a giant red flag on the resulting utxos.
Staying private on a fully transparent ledger is a losing proposition.
