Why do centralized exchanges continue to list Zcash while delisting Monero?

Because they have a centralized point of control with the company who they can knock on and put pressure on to do what they want.
That's why Monero was pulled off of exchanges, because when the exchanges said we need transparent addresses, Zcash, capitulated, and complied, Monero did not.
