Came out great. Better than I expected for sure.
4-5 hrs on low in the crock pot last night, turned heat off overnight . This morning I turned the slow cooker back on and let it come back up to temp and then pulled and shredded.
Used the unrendered fat for a gravy base and like half of the cooking liquid. Really solid and easy to cook meat dish.
