So at some point the doctrine changed? My knowledge of of Orthodox Christianity stops with the Byzantine empire

No, you’re referring to a period of roughly 100 years between the 8th and 9th century in Byzantine. But other orthodox churches didn’t follow through and eventually icons remained an integral part of the tradition. Iconoclasm was condemned ever since.
