Let’s say Core 30 gets issued and some sick fuck puts a disgusting, foul picture in the allowed larger OP Return.
After that, We spin up a node using an older version of Core or Knots.
Is that disgusting filth stored on my computer that’s running the node?
I do understand that it won’t be in my mempool using implementations only allowing small OP Returns, but is the nasty content stored on my drive if I’m running a full node?

It will be in your mempool and on your node after confirmed no matter what. The only difference is that you won't relay to other's mempools if you have a lower data carrier size limit.

Once the transaction is confirmed in a block there is no difference between knots and core, both store the confirmed blocks.
However, if the data is stored in op_return (however big): as far as I know, there is an option that you can configure to not store any op_return data. But that also is available in both knots and core
