I don't pretend to have privacy. What you want is single-party accountability, where your info can't be leaked without being traced back to a particular source.
So, a good option is a burner phone, especially a Pixel or iPhone, with a fully open source wallet app. Google makes the Pixel and its OS, Apple makes the iPhone and its OS, so if anything leaks, you can check the wallet's code for anything that would cause the leak, and if there's nothing, you can directly blame Google or Apple.
Another option is a cheap throwaway laptop, an open-source hardware wallet, and Tor. I'm not sure which is really better between that and a burner phone
