What's the minimum number of lightning channels for a consumer node?
I had two on Alby Hub. One got closed but zaps still not working. I guess the other one was just for looks.
Starting to think Alby isn't worth the subscription.

The wrong assumption that is Alby's fault for those closed channels.
For a normal use of LN, I would say that 2-3 private channels are more than enough. Even 2 channels with different peers could do it fine.
But choose the LSP that offer re-leasing the channel period, once it expire. Usually you are buying channels for a certain period. When that period it expire, the LSP is free to close it.
Also take in consideration WHY that channel was closed.
