My kids love pancakes, but I don't love standing over the griddle for an hour or more.
I've been making sheet pan pancakes for a couple of months, but my daughter missed "circle" pancakes.
It dawned on me yesterday that I could use muffin pans to make circle pancakes in the oven.
Needless to say, they were a hit this morning!
