... so even though there's testnet support for the embedded node, does lack of swaps support mean I would have to use something other than Zeus to get on-chain testnet coins into the embedded node in order to test it?

We do not provide coins for any test network. Even with swaps on testnet you’d still need to source your coins from elsewhere.
You can always spin up a regtest node with the Polar desktop app and get familiar with ZEUS that way. One click in Polar to generate regtest coins.
