Running a mail server is kind of a pain. This could totally be done, but would have to be on a paid relay or something

What does that even mean? Email is a separate protocol suit, you can't just squeeze it into nostr somehow. Now, if you just mean longform direct messages, which is what Emails essentially are, then we are in agreement here.
