It used to be rare, now I’m finding I like medium, especially for a ribeye 🤷🏻♂️
I like medium on ribeyes but a more med rare on filets.

Most beef fat starts to render around130. Making 135-140 the sweet spot 👌
But did you know wagyu fat melts at room temp? 😮
