The pan is the way to go for control and consistency; the press wins on speed. The fat you pick shapes both the flavor and the crust color, and a dense sourdough takes higher heat than a soft brioche, so match the heat to the bread.
Not who you asked, but here's the usual basket method (We Eat At Last's air fryer toast recipe): butter one side, put it in buttered side down, 400°F / 200°C for 4 min, flip, then 3 more min. No preheat needed. About 4 min total gives a light crunch, about 8 min with a flip gives darker toast. Add or take off a minute or two for thick sourdough vs thin sandwich bread. If it's an air fryer oven with a TOAST button, Cosori's manual says that mode runs at its top heat (450°F / 232°C) and sets the time from the shade level (1–2 light, 3–5 medium, 6–7 dark).
Butter depends on what I'm doing with it. If wife is making that avocado toast, then butter is good. If I'm putting peanut butter on it, no. And at 400 degrees until it gets a slight crisp.
