These soft shokupan rolls fresh out the oven are seriously good. 👌🏼
Tonight wellington was even better. Took it out a bit earlier and the middle was wonderful 👌🏼 image
Venison wellington for the win. Served with truffled cauliflower and bordaliase sauce 😋👌🏼 image

I am too deep in the btctc play. Sure most is in my pension but also in my wife’s isa and kids accounts. Too much man. Staying humble is a mother fucker 🙈😆
Most men don’t choose the dad bod. It arrives slowly — one skipped workout, one office day, one takeaway, one stiff back at a time. But here’s the thing nobody says out loud: The dad bod isn’t inevitable. It’s just a signal. A signal that the modern lifestyle (sit, drive, stare, slump, snack, repeat) is completely at odds with how a human body is meant to function. On the latest episode of The Healthy Bit, Hayley and I got into what really drives those changes in your 30s, 40s, and 50s… and why most of it is reversible. A few big points: • Tight backs and necks aren’t “age” — they’re years of poor movement patterns • Recovery gets worse when hydration and protein are low • Weak upper-back and stabiliser muscles create that constant “tight” feeling • Ultra-processed food accelerates all of it • Strength work + real food can turn things around shockingly fast And because I’m a chef, of course we talked pans. Here’s my honest take: If your pan is rubbish, your food will be rubbish. And if your food is rubbish, your health will follow. A heavy cast iron or stainless steel pan is genuinely a health tool. You cook better, you eat better, you rely less on the stuff that wrecks your energy and cravings. I even broke down the full method for a proper steak — including the optional butter-basting finish with garlic and thyme. High protein, satisfying, and the opposite of the sad low-fat nonsense we all got sold for years. You don’t need a 30-day shred, or a detox, or a colour-coded spreadsheet. You just need to stack small habits: cook from scratch, eat real protein, move your body, lift something heavy, prioritise sleep, repeat. The dad bod isn’t a life sentence. It’s a nudge. And it’s absolutely fixable. Full episode here: https://www.henryherbert.co.uk/copy-of-episode-
Just six spots left for our December Feast We’re nearly full for what promises to be a spectacular end-of-year menu, complete with a proper centrepiece—venison Wellington with truffled cauliflower and all the festive trimmings. Sadly, no bonus November date (turns out I should check the family diary before announcing extra evenings). But onwards and upwards... We’ve now opened bookings for 2026, starting with a February feast on the 6th and 7th. Yes, it sounds far away, but the good ones always book fast. No menu yet—I like to let the ingredients and inspiration lead—but I am hoping for a Japanese hibachi grill for Christmas (if you’re reading this, Jess). Expect smoky, aromatic skewers, grilled moments before they land on your plate. If you fancy joining us in Nailsworth, head to the website to book. Come hungry. image
I’ve been learning a lot recently about menopause — partly through our latest Healthy Bit episode, and partly because I know it’s something my partner will experience one day, and I want to understand how best to support her. It’s a phase of life that still doesn’t get talked about enough. From what I’ve learned through chatting with Hayley, it’s not just about the physical symptoms — it’s about how exercise, nutrition, and emotional support all come together to help women feel more like themselves during a huge period of change. We talked about the impact on bone and muscle health, sleep, and energy, and how even small, consistent things — a walk, a proper meal, being patient — can make a real difference. I’ve shared a simple recipe too: a Mediterranean fish (or bean) stew that’s full of protein, fibre, and good fats — the kind of food that nourishes without being complicated. For me, this episode was a chance to listen more and think about what support really looks like — not just through food, but in understanding and empathy.
