2. Alice has a mint, and when she pays Bob, he gets nuts issued by Alice's mint, right? What if Alice's mint gets down, how Bob can get BTC then?

So how one can use it? If I'm a merchant, should I always be online to finalize transactions if I don't trust my payers?
I guess based on the value of the transactions you should at least have some kind of sporadic internet connectivity.
