In my experience adding a new layer of drywall has it's place ie a terrible ceiling is best overboarded. But it is not a cheap or simple option for walls where It requires either another contractor to coordinate with, ( never a good option!) or a change of chip for the Painter. ( Life is hard enough). It affects baseboards and sockets and finding joists. And without a plaster skim coat, taped drywall is an inferior finish to the system he is using. This way the Painter is a one man army and although metre for metre is shower, they can match the plasterers finish and in fact, by using specific fillers, if you get the Paint to match the grain size of the top filler coat, you will achieve a perfectly smooth topcoat finish without trying. Ie better finish than over drywall or even over a gypsum plaster finish. There is an even better solution, in terms of speed... I have worked with dozens of plasterers and I persuaded the best one to skim out a wall for me with one of these "painters plasters". He was very skeptical until he used It. It took him minutes to dab out a large wall and polish It Up, which surprised him. The Key though was when he Saw the finish when I Painted It in front of him. Him and his mates were putting their grubby fingers all over It It was so silly smooth and couldnt criticise anything. But it's very hard to find a great plasterer at the best of times.
