Does anyone here know of good ways to find people to follow here on Nostr that are into and post about similar topics? I've got friends who are freedom-minded, but their entire personality is not "I'm into Bitcoin", and I'm wondering how they might get more into Nostr.

Try searching for hashtags.
Use a search engine like nos.today with key phrases search of whatever your friends are into: permaculture, homestead, gardening, homeschool etc..

Yeah seconding hashtags, also explore relays, mostr is a mastodon bridge and there's a minds one too. Extends the pool a bit.
