From my experience Apple Pay has three basic modes, Wallet app NFC, online payment and web store checkout. The first two should only transmit a randomized one time authorization code, the third one should present a preview with your default shipping information, name, physical address, email and phone, to verify or edit. Do you clearly remember which mode you used? If Apple Pay transmitted one or more fields of your shipping information outside a checkout setting that would seem like a significant issue.
