So is HydraVeil something that’s installed server-side, on Linux let’s say, and then your browser (on Mac or Windows) points to it like a proxy? Or does it require Linux on client side as well? Or is it a browser extension that installs into Brave?

Most people run HydraVeil as an appimage on Linux. Inside HydraVeil there are browser profiles specifically tailored to combat browser fingerprinting. So you can use it on any machine and have a specific browsing profile for certain activities.
Isolated browsers for isolated behaviour.
