Coinflips being binary make them far more suited even if a little tedious, as each bit is randomly generated separately and has a purely random chance of being a 0 or a 1.
That said the dice rolls using Coldcards are not known to be problematic if you use enough. But if you're done trusting anything you can't easily verify by sight coin flips are hard to beat.
