Good to have these things up your sleeve in case of said emergencies! Nibs are amazing sprinkled over smoothie bowls, granola, fruit and yogurt, a nice addition on all ice creams, mixed into cookie dough… just a few to kick you off! Let us know how you get along. Enjoy!
Check! Can it be used like other chocolate and melted or should I not try that? Want to be careful how much I experiment with things.

What you have is cacao one step before chocolate. In order to turn the nibs into chocolate as you know it you would need to hand grind it, turning it into a paste, this grinding process releases the fats from the cacao and little by little turns the nibs into a smoothy, silky gooey liquid. This when placed in a mold will set and give you a 100% block of cacao, like the El Clásico block you have hidden away from the women of your house. Personally my recommendation with the nibs is to enjoy them as they are which is a unique taste experience, and then work with the El Clásico block of cacao for drinking and eating in whatever ways you and your family like chocolate.
Love the raw experience! Can't wait to try it but I Am holding off on breaking into the nibs. Can't give any clues away here of what surprises lay ahead!
What would be cool is to learn how to grind and make it into the chocolate by hand, and do my best lindt chocolatier impression for the lady 😁❤️ hmm 🤔 I could learn that by February
There’s an amazing machine called a melanger (Premier is one brand), otherwise known as a concher, and if you run the cacao nibs through this for 12hrs to 72hrs you will get an incredibly fine chocolate. You needs quantities of over 3lbs for it to work well. A hand grinder is another option, and a good work out for the biceps, a good family activity taking it in turns.
