There’s an amazing machine called a melanger (Premier is one brand), otherwise known as a concher, and if you run the cacao nibs through this for 12hrs to 72hrs you will get an incredibly fine chocolate. You needs quantities of over 3lbs for it to work well. A hand grinder is another option, and a good work out for the biceps, a good family activity taking it in turns.
