Back in the day, most Thai people traveled by boat through neighborhood canals, so noodle vendors sold their dishes right from small rowing boats. Because of the limited space, they had to serve smaller portions — easy to prepare, hand over, and enjoy by the water.
Traditionally, each bowl was pre-seasoned with chili flakes, vinegar, and sugar at the bottom, making it flavorful and convenient. That way, both sellers and customers could enjoy perfectly seasoned noodles without the need for extra condiment sets.
