How does Zapstore handle release variations? For example, I can't find the fdroid version of Amethyst or the offline version of Amber in Zapstore.

I honestly have no context for what you mean. I don't see much functional difference between obtanium and zapstore. Granted, I'm ignorant, but... What's gonna make me switch?
Use @Zapstore for actually wotking WoT social verification; use #obtainium for apps with custom releases, non-github apps, regex filtering releases, etc.

No. Zapstore is great for final releases.
But if I want to install pre-releases I use Obtainium.
