I have to find it. It's not mine, so I can only give ๐ค suggestions. I subscribe to a meal planning service and got it from there. I want to keep them in business because it makes my grocery shopping and menu planning life way less stressful...but it's easy enough to figure out ๐

Lasagna Soup:
Onions - 1 , diced
Garlic - 4 cloves , chopped
Lasagna noodles - 6 oz , broken into pieces
Mushrooms, any button - 8 oz , sliced
Oil, cooking - 1 Tbsp
Sausage, Italian and raw - 8 oz
Tomato paste - 2 Tbsp
Oregano, dried - 1 tsp
Basil, dried - 1/2 tsp
Italian seasoning - 1/2 tsp
Red pepper flakes (opt) - 1/2 tsp
Stock, any type - 4 cups
Tomatoes, diced and preferably fire-roasted (14 oz / 397 g) - 1 can
Bay leaves - 2
Baby spinach - 5 oz
Cheese, ricotta - 1/4 cup
Cheese, parmesan - 2 oz , grated
Onions, garlic, and mushrooms get sauteed. Add in sausage and cook a bit. Then tomato paste, basil, oregano, Italian seasoning, and pepper flakes. Stock, tomatoes, and bay leaves next. Simmer then noods go in. Once you get noods almost there throw the spinach in. Finish with salt & pepper adjust seasonings to taste. Throw that shit in a bowl with a dollop of ricotta and some parm ๐คค๐ค๐ค
I usually eyeball my broth as Cheese and Jr don't like soupy soups. Campanelle or farfalle pasta works well instead of breaking the lasagna noodles, really I think any noodle will work well. Serve it with garlic bread for dunking!
