You were destined to be a plant owner. If they're like ginger, they like damp but not wet soil. Don't let it dry out completely because they dont like that.

When I was a kid my great grandmother almost always had a sweet potato rooting in a jar in the kitchen. They are cousins to morning glories and also make a pretty flower. If you stick that potato in a pot, it'll grow into a giant plant but die off when it gets cold.
