Not sure. I imagine each client would be able to choose which mint it uses by default, while allowing more technical users to select a different mint if they so choose. I popped over to #Olas and disconnected my NWC wallet in favor of using the NIP-60 wallet and it seems to be using mint.coinos.io, stablenut.umint.cash, and mind.minibits.cash/Bitcoin without me having to select anything. It also automatically found an eCash wallet living on the relays that I had previously set up with Shopstr that uses MiniBits as the mint by default.
Oh for sure! The ability to be rugged is part of all forms of custodial solutions. Those of us who want to protect ourselves from being rugged will likely avoid any Nostr client that doesn't let us connect our own self-hosted wallet using NWC.
