Weed is legal in my state .. but that's not my kink. I fear jail. Tax evasion is whole 'nuther order of magnitude. Exchanges now report 100% to the IRS how much was purchased. All the Bitcoin I've ever sold has been at a loss or break even and I'll keep it that way because tracking costs is exceedingly complicated. Hell , at this point I'll probably sell some Bitcoin just to load up my tax return with a little action. I know they know that I buy Bitcoin. Same way with my guns .. in my State .. they know EVERYTHING.

You can use free (libre) exchanges and still pay taxes. RoboSats and Bisq are great and they don't KYC. Even if you pay taxes (which no one here is telling you not to) it's not a good idea to KYC nor have custodial Bitcoin unless you have to
You can buy, and sell Bitcoin without Kyc on platforms like Bisq, Robosats, Vexl, etc. for cash, and also from some vending machines with a burner #. Bitcoin is about freeing the individual from the state's control. If you want to report then report, if not then live free. Personally, I pay my taxes on fiat but crypto is my money.
If you pay for goods and services in Bitcoin, you never sold anything. If your complaint is being scared of the IRS just say so. There are so many places to pay for goods and services with Bitcoin. Your original complaint was a total canard.
