Only more authentic thing I could add to this would be dispensing with the instant yeast, and using a starter you keep going. But instant is fine. And yea, keep warm on a rice cooker, or the Yogurt setting on some Instant Pots is a great hack for when you don't have a sufficiently warm kitchen.
