This to me, speaks to the power of your mind & your beliefs.
I like fasting & I believe it's very powerful. I'm not dismissing the benefits of fasting.
It's just much more powerful if you believe that after 3 days your body is flooded with stem cells that repair & renew every damaged cell in your body.
Initially the massive drop in inflammation is encouraging. As you push through your fast, you imagine all the healing that is occurring. It's at this point where the power of your mind is unleashed.
I'd wager you would get different results if you forcefully starved people for 5 days versus people doing it of their own will.

You make a great point.
It's really hard to get your mind into a state where it can affect your reality so positively & dramatically though.
They're commonly known as permission slips because they give your mind the ability to believe in something that is otherwise 'unbelievable'.
I would use this knowledge to emphasize the effects rather than diminish them.
Imagine those stem cells progressively being created & flooding your blood as you fast. From about day 2-3 imagine them filling your blood, working their magic in repairing damaged cells & regenerating tissues.
It's not a huge leap of faith because we have so much supporting evidence in the effects of autophagy, cell regeneration, etc. The key is to use your mind to magnify these effects.
