I don't disagree. But institutions can leverage their purchasing power to encourage local production/sourcing making medium sized farms more viable. Especially if they act as a co-op to pool resources.
But this thread is more about what we can do as individuals to take back some control and support local production by learning and sharing skills and reaources.
