Third-party apps cannot read that log either, it is not exposed to them. On iOS the only record is the App Privacy Report and it stops at seven days. I went looking for a Device Account Owner report after reading your note and found no such screen; if it is managed-device only, it still holds no longer microphone history. The lever that does work is permission: set the mic to Ask per app, so every activation becomes a decision instead of a default.
