Two projects come together and do some cold smoking , my 17.5 lb home cured ham , and my Lamb Pancetta . The pancetta won’t take nearly as long as this giant hog leg ,, but I’m very happy with all the colors and smells ,, I failed at my tie on the lamb so I had to use socks . Don’t laugh ! #foodstr #bbqstr Don’t zap this , my lightning isn’t on at the moment . Should be done tomorrow afternoon , at 165 with tojj no one’s lows , this will be super cold smoke ! Sweetness

Found a 3.5 lb French cut pork loin on sale , made a peanut butter whiskey cure and after three days , it’s about to hit the smoker for a few hours ,, I will continously baste the brown sugar honey seasame soy glaze through out. This should be very tasty Canadian bacon and last for a while , but who knows , maybe I wrap it at 145 and take it to 202 and have some pulled Canadian ham bacon to top everything with, It’s going to be a game time decision #bbqstr #foodstr
