My youngest son and I turned the ground rabbit (ground 2days ago) into rabbit basil sausage tonight.
7.4 lbs ground rabbit meat,
chopped leaves from 1 basil plant (1 cup?)
8 tsp salt,
4 tsp ground black pepper,
1lb tallow, shaved
3/4 lb water.
Mixed in kitchen aid, tried stuffing but had a tough time getting the casing to cooperate, so the rest was vac bagged loose. Picture was the sample to get the taste right.


Since I graduated from high school, I've shied away from doing anything with vehicle maintenance except for oil changes. Anything more complicated, and I took it to the shop or to my dad or sons to work on. I'm getting closer to retirement, and now I'm starting to get interested in vehicle maintenance again. Changed the oil on the skid steer today, planning a trip to the auto parts store tomorrow to stock up on a few parts. Found the user manual online and printed it out. I think this might be a fun new hobby!
Homesteading for more freedom. This morning my youngest son helped debone and grind 5 rabbits to make into basil sausage. Forgot to take pictures of the process, but who wants to see sausage making anyway, right? Here is the reliable 1950s GE grinder after cleaning.
