I was craving the okoy my sister-in-law gave me yesterday, so I decided to make my own today. These are the vegetables I'm using: squash, carrots, sweet potato, and jicama. I'll make the dipping sauce later.
This isn't our lunch, though. Kyrie is having crispy burger patties, while I'll be frying some marinated chicken for mine. I just sliced the vegetables while enjoying my morning coffee.
After this, it's back to cleaning the house. Still a lot to do, but one task at a time. Hope you're all having a productive day too!
