With the growing season fast approaching. Here’s some tips to get you going. Start Cucumbers indoors, provide a bottom heat of about 70°F by placing planted seeds on top of a refrigerator or water heater to take advantage of the extra warmth. When seeds sprout move them to a sunny spot. Plant outdoors no earlier then two weeks after the last frost date. image

With the growing season fast approaching. Here’s some tips to help get you going. Start your pepper seeds indoors by planting 3 seeds to each pot. As soon as the second set of leaves emerges on the seedlings, thin out the weakest one, leaving the other two. Keep these pairs together and treat them as one when you transplant them. Transplant when soil temps are above 70°F. They will help support each other and the combined foliage helps protect the peppers from sun scaling. image

Recipe Monday: Golden Honey Pan Rolls: 1 cup milk (70° to 80°) 1 egg 1 egg yolk 1/2 cup vegetable oil 2 tablespoons honey 1-1/2 teaspoons salt 3-1/2 cups bread flour 2-1/4 teaspoons active dry yeast Glaze: 1/3 cup sugar 2 tablespoons butter, melted 1 tablespoon honey 1 egg white Additional honey, optional In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.) When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let rest for 10 minutes. Divide into 24 pieces; shape each into a ball. Place 12 balls each in two greased 8-in. baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. For glaze, combine sugar, butter, honey and egg white; drizzle over dough. Bake at 350º for 20-25 minutes or until golden brown. Recipe Monday: Barbecue Chicken Casserole: 1 cup all purpose flour 1 broiler / fryer chicken (3 to 4 pounds)cut up 2 tablespoons vegetable oil 1 cup chopped onion 1 cup chopped green pepper 1 cup thinly sliced celery 1 cup ketchup 1/2 cup water 3 tablespoons brown sugar 3 tablespoons Worcestershire sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1 package (16 ounces) frozen corn, thawed Place flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown the chicken in the oil. Transfer to an ungreased 13in x 9in x 2in baking dish. Drain skillet, reserving 2 tablespoons drippings. In the drippings sauté onion, green pepper, and celery until tender. In a bowl, combine the ketchup, water, brown sugar, Worcestershire sauce, salt and pepper then add to vegetables. Bring to a boil. Pour over the chicken. Cover and bake at 350°F for 30 minutes. Sprinkle with corn. Bake 18-20 minutes longer or until chicken juices run clear and corn is tender. image
