Recipe Monday:
Sunshine Carrots
Ingredients:
5 medium carrots
1 tablespoon sugar
1 teaspoon of cornstarch
1/4 teaspoon salt
1/4 teaspoon ginger
1/4 cup orange juice
2 tablespoons butter
Instructions:
Slice carrots crosswise on the bias about 1 inch thick. Cook, covered, in boiling salted water till just tender, about 20 minutes; drain. Meanwhile, combine sugar, cornstarch, salt, and ginger in small saucepan. Add orange juice; cook, stirring constantly, until the mixture thickens and bubbles. Boil 1 minute. Stir in butter. Pour over hot carrots, tossing to coat evenly. Serves 4.

Recipe Monday:
Perfect white bread:
1 package of active dry yeast
1/4 cup of water
2 cups milk, scalded
2 tablespoons sugar
1 tablespoon shortening
6 to 6.25 cups all purpose flour
Soften dry yeast in warm water(about 110°F), combine hot milk, sugar, salt and shortening, cool until lukewarm. Stir in 2 cups of flour, then add the softened yeast. Mix well, then add enough of the remaining flour to create a moderately stiff dough.
Then turn out onto a lightly floured surface and knead until the dough becomes smooth and satiny(about 8-10 minutes) then form into a ball and place in lightly greased bowl turning once to grease the surface of the dough. Cover and let rise in warm place until double.(about 1.5 hours)
Then punch dough down and let rise again until doubled (45minutes) then cut into 2 portions and form into 2 smooth balls, cover and let rest for 10 minutes.
Then roll each ball of dough using a rolling pin until they’re a 15x7 rectangle, from the narrow side begin to roll the dough over itself like you a jelly roll. Do this for both balls and place the loaves into greased bread pans. Let rise again until double (1hour), bake in oven at 400°F for 35 minutes.
You now have perhaps the best white bread you will ever taste. Thank us later.
